Abstract

In the present work, a brief development of the structure, chemical and biological activity of carnosine dipeptide is initially carried out. The mechanisms by which carnosine prevents the development of diabetic nephropathy are then analyzed, demonstrating the role of carnosine in the binding of serum carnosinase which has been shown to be related to both the development and progression of diabetic nephropathy.

It is finally clinically proven, that carnosine and related compounds showed effective regression of advanced glycation end products (AGEs) formation to peritoneal dialysis (PD) fluids.
